Pepper Jack Cornbread Muffins
I've been using a lot of pepper jack cheese lately, it is a perfect spicy flavor to add to anything that already uses cheese. So I wanted to try to use it in something new, so I found this recipe idea from Ezra Pound Cake to make pepper jack corn muffins. I adjusted a little, I used muffin mix and added the cheese, so they were really easy to make.
Ingredients:
-1 box corn muffin mix
-1 egg
-1/3 cup milk
-1/2 cup pepper jack cheese
I ate mine with some lentil soup and pasta. I think cornbread goes well with chili, and lentil soup had a similar consistency, so it matched. I could have used a lot more cheese in this, I could really smell the pepper, but there was only a slight taste. Next time I might had some red pepper too to bring out the spiciness in the muffin.
Mix all the ingredients until just combined. |
Cook at 400 for about 15 minutes. |
