Halloumi and Vegetable Kabobs with Tropical Mango Sauce


These were a great vegetarian option for a kabob on the grill. If you haven't had halloumi, it is worth checking out. It tastes like mozzarella, so it goes great with almost any vegetable, and this sauce was really great with it.

Sauce Recipe from Undressed Skeleton.

Ingredients:
Sauce
-1 Cup Fresh Pineapple
-1 tsp. Cinnamon
-1 Cup Fresh Mango
-1 Small Peach
-2 Tbsp Sugar

-Halloumi
-Zucchini
-Green Peppers
-Onion
-Steak Seasoning

Add all the sauce ingredients in the blender.
Blend til smooth.
This can be made ahead of time. 
Assemble the skewers.
Grill for a few minutes on each side.
Make sure the cheese is big enough to not fall through
the grill. I can get a little sticky if you leave it on too long,
so be sure to check it often.
Top with sauce and seasoning.



This was really good, I definitely went back for seconds. You can use other vegetables if you want to make this kebob, I think the mango sauce would go with anything, it was just sweet enough to not be overpowering, but still have a good flavor. It was kind of the consistency of applesauce, pineapple and peach were a good combination.
