Strawberry Basil Lemon Fruit Roll-ups



I saw this recipe on the front cover of Relish magazine and went to the store after work to buy the ingredients for it. However, strawberries were much cheaper than blackberries and the grocery store was completely out of mint. I adapted this recipe based on a drink I had at a restaurant once, a delicious mix of limoncello, strawberry and basil.

Ingredients: 

-3 cups strawberries
-1/4 cup basil leaves
-1/4 cup honey
-2 tablespoons lemon juice
-zest of 1 lemon
-parchment paper
Blend together the food ingredients in the blender until smooth, strain the seeds out if you'd like, but I don't think it makes a difference. 

Spread onto a 11x17 pan covered in parchment paper.
Bake for six hours at 170 degrees.

Once the fruit puree is dried, remove from the oven.
But the parchment paper in half, then roll each half into a cigar shape.
Cut into strips. 

Serve.

This recipe was just like the kind of fruit leather I enjoyed as a kid, except much healthier. I know exactly what went into this, unlike the store bought type which is full of ingredients which are not natural. This also wasn't as sticky as the store bought kind, it always made me feel like I was going to rip out my teeth,  this has the perfect amount of give to it. The strawberry and lemon are the most predominant flavors, the basil wasn't as strong as I thought it would be. I would love to try this again with different flavors.
