Zucchini Sandwich Cookies


I like anything with zucchini, so these were really good. They were kind of a mix between zucchini bread and cookies. They weren't very heavy, so they were nice to eat for any snack, I even had one for breakfast.

This recipe comes from Julie's Eats and Treats.

Ingredients:
-3 eggs
-1 cup sugar
-1 cup brown sugar
-1 cup vegetable oil
-1 medium zucchini
-3 tsp vanilla
-1 tsp baking soda
-1/2 tsp baking powder
-1 tsp cinnamon
-1 tsp salt
-4 cup flour
-1 cup raisins
-Cream cheese frosting

This makes about 36 medium sized cookies.

Beat the eggs. Mix with the sugar, brown sugar, vegetable
oil, and grated zucchini. In another bowl, mix the baking soda,
baking powder, cinnamon, salt, flour, and raisins. 
Scoop onto a greased baking sheet, bake at 350 for 12-13 minutes.
Let cool.
Frost them as sandwich cookies, or just put frosting on top.

These were good! I thought as a sandwich cookie they were a little big, but a perfect size as a singular frosted cookie. They weren't too hard to make since I used storebought frosting rather than make my own, but I thought that was a good to use something easy since the cookies were homemade.
