Tortellini in Creamy Rosé Sauce

Ingredients:
1 Tbsp. olive oil
1 onion, chopped
1 clove garlic, minced
1-1/2 cups vegetable broth
1 cup spaghetti sauce
1 pkg. (9 oz.) refrigerated cheese tortellini
1/2 cup Philadelphia Original Cooking Creme
4 cups loosely packed baby spinach leaves
1/4 cup Grated Parmesan Cheese
Saute the onions and garlic in oil for 5 minutes. I didn't have an onion, but used green onion. |
Add the sauce and broth, bring to a boil. |
Add tortellini and simmer. |
Cook covered for 5 minutes. |
Stir occasionally. |
Add in cooking cream...we had a miscommunication and ended up with regular cream cheese. If that's what you're using, cut it into pieces and it'll melt just fine. |
Cook for five minutes, or until cheese is melted. |
Add in spinach and cook covered until spinach is wilted. |
Top with cheese if desired and serve warm. |
