Veggie Quesadillas

 This past summer we ate at a Mexican restaurant near Cleveland which had previously been featured on the FoodNetwork Show Restaurant Impossible. The new decor of the Mad Cactus and the yummy salsa bar were pluses, but the food was amazing.

Here's a picture of the veggie quesadilla that I enjoyed:

Filled with veggies and cheese this was a delicious meal which I decided to recreate with some vegetables that I had on hand.

-Cooking spray
-Veggies (I used cauliflower, broccoli and green onion).
Saute the vegetables until slightly tender.
Top a tortilla with cheese, then with the vegetables, more cheese and the second tortilla.
Cook for 3-5 minutes on each side. 

This is a quick and easy recipe which is delicious and can be easily converted. Happy cooking!
