Roasted Cabbage Wedges


Here's an easy side dish or dinner recipe which doesn't take too much prep work and has a lot of inactivity time during which you can prepare something else or in my case work on a practice exam. The original recipe is from Martha Stewart


Ingredients:
-1 tablespoon plus 2 more tablespoons extra-virgin olive oil
-1 medium head green cabbage, cut into 1-inch-thick rounds
-Coarse salt and ground pepper

Preheat the oven to 400.

Place as many cabbage wedges on a foil lined pan as needed.
I was cooking for one so I only made one.

Drizzle with oil, top with salt and pepper.
Roast for 40 minutes.
I love fried cabbage and this was a delicious and easy way to make cabbage with a lot less oil.
