Ranch Mashed Potatoes
This recipe comes from Rachael Ray. I'm always looking for a good way to jazz up mashed potatoes because it is such an easy side dish to make and the flavor of the mix-ins can be adapted to almost any meal.
Ingredients:
-5 to 7 small red potatoes
-Butter
-Milk, both to taste
-A small handful fresh chives, finely chopped
-A small handful fresh dill, finely chopped
-A small handful flat-leaf parsley, finely chopped
-1 cup sour cream
Heat up the potatoes in a pot of boiling water until fork tender. Drain. Mash the potatoes with the butter and milk.

Add in the fresh herbs and sour cream. |
Enjoy with some salt and pepper if desired. |
When you make this recipe, reduce the dill! J's biggest complaint was that the dill flavor was too strong, and I agree, that flavor herb should have been cut in half compared to proportion of the others. Overall, this was a good recipe, there was a ranch flavor to the potatoes and it was nice to use fresh herbs, it might have been easier to mix in a ranch seasoning packet, but I always appreciate using fresh ingredients. The fresh herbs also added a nice color to the mashed potatoes.
