Tortellini in Creamy Rosé Sauce


If you're looking for another great sauce for tortellini check out this recipe for Tortellini in a Roasted Red Pepper Sauce. The recipe comes from Kraft.

Ingredients:
1 Tbsp. olive oil
1 onion, chopped
1 clove garlic, minced
1-1/2 cups vegetable broth
1 cup spaghetti sauce
1 pkg. (9 oz.) refrigerated cheese tortellini
1/2 cup Philadelphia Original Cooking Creme
4 cups loosely packed baby spinach leaves
1/4 cup  Grated Parmesan Cheese

Saute the onions and garlic in oil for 5 minutes.
I didn't have an onion, but used green onion.
Add the sauce and broth, bring to a boil.
Add tortellini and simmer.
Cook covered for 5 minutes.
Stir occasionally. 
Add in cooking cream...we had a miscommunication and ended up with regular cream cheese.
If that's what you're using, cut it into pieces and it'll melt just fine.
Cook for five minutes, or until cheese is melted.
Add in spinach and cook covered until spinach is wilted.
Top with cheese if desired and serve warm.
This pasta was good, a nice differentiation from typical pasta with marinara sauce.  J. also liked it and said that he would make it again.
