Green Grilled Cheese


April is National Grilled Cheese Month, so throughout the month we have some recipes for new twists on grilled cheese. It is hard to tell what is on the inside of the grilled cheese in a picture, but I thought it was cool that the ingredients were all green, it was an cool thing for this sandwich. I found the original recipe here.

Ingredients:
-2 slices bread
-mozzarella cheese
-spinach
-1/4 avocado, sliced
-olive oil

Pesto
-1 clove garlic
-1/2 small shallot, chopped
-1 teaspoon lemon juice
-handful chopped fresh Italian parsley
-handful chopped kale
-2-3 tablespoons chopped fresh tarragon
-1 tablespoon chopped chives
-¼ cup olive oil

Make the pesto in the blender. I adapted mine a bit
from the original, I used spinach rather than kale, and didn't have
tarragon or shallots. Mine tasted ok, but it would probably make
more and be easier to spread if you use kale.
After I chopped everything in the blender, I added the olive oil.
Spread the pest on one slice of bread.
Sprinkle on mozzarella cheese.
Add spinach.
Add avocado. Add to a pan with butter or oil and cook until
the bottom gets a little brown, then flip.

I liked this, it was good to get some vegetables and a new twist on a regular grilled cheese.
