Avocado Pasta Sauce
Avocados are good, and pasta is good, so why not avocado pasta? This was really something different, I wouldn't have thought to combine the two. The idea for this comes from the blog Chocolate and Chillies.
Ingredients:
-2 tbsp extra virgin olive oil-juice and zest of half a lemon
-2 garlic clove, minced
-1 medium avocado
-1/2 cup pasta water
-2 1/2 cups pasta
-salt and pepper
-2 1/2 cups pasta
-salt and pepper
Cook pasta according to the package directions. Combine all of the remaining ingredients, minus the pasta water. |
I mixed mine in an attachment to my immersion blender. |
This didn't really looked like it made a lot a first, but it was pretty thick. Once I added the some water it was more of a sauce consistency and was enough for a few servings. |
Add a few spoonfuls to the pasta. |
This really tasted like avocado, so if you really like avocado you'll probably like this, but if you aren't as sure about it the taste may be a bit overwhelming. It did taste a little bit like I was eating guacamole on my pasta. This was really easy to make though, the sauce was ready by the time the pasta was finished cooking. I also would recommend only making enough for you to eat at once (especially since it wasn't much work) because it definitely tasted better when I first made it than for lunch the next day.
