Chocolate Chip Breakfast Muffins
I made this on a Friday night when I knew that J., Becky and I all needed to be somewhere early in the morning. I wanted a breakfast that we could just grab on the go, sometimes as a food blogger when you make a lot of complicated recipes, you need to turn to easy things every once in a while.

-1 cup buttermilk
-1 egg
-1/2 cup brown sugar
-1 cup flour
-1/2 teaspoon salt
-1/2 teaspoon baking soda
-1 teaspoon baking powder
-1/2 cup oil
-1 cup chocolate chips, raisins, blueberries, etc.
To make butter milk, add a tablespoon of vinegar to a cup of milk that is missing a tablespoon. Let sit for five minutes.
Soak the oats in buttermilk for one hour and then combine the oatmeal with the egg and sugar. Add in the flour, baking soda and baking powder. Add oil and chocolate chips (or fruit if desired). Bake at 400 for 15-17 minutes in a muffin tin.
