Chocolate Chip Breakfast Muffins


I made this on a Friday night when I knew that J., Becky and I all needed to be somewhere early in the morning. I wanted a breakfast that we could just grab on the go, sometimes as a food blogger when you make a lot of complicated recipes, you need to turn to easy things every once in a while.

This recipe comes from Lynn's Kitchen Adventures.

Ingredients: 
-1 cup old fashioned oats 
-1 cup buttermilk
-1 egg
-1/2 cup brown sugar
-1 cup flour 
-1/2 teaspoon salt
-1/2 teaspoon baking soda
-1 teaspoon baking powder
-1/2 cup oil
-1 cup chocolate chips, raisins, blueberries, etc.

To make butter milk, add a tablespoon of vinegar to a cup of milk that is missing a tablespoon. Let sit for five minutes.

Soak the oats in buttermilk for one hour and then combine the oatmeal with the egg and sugar. Add in the flour, baking soda and baking powder. Add oil and chocolate chips (or fruit if desired). Bake at 400 for 15-17 minutes in a muffin tin. 

These were good, they were pretty dense due to the oatmeal in the muffins, but they were pretty filling which was what we were going for since we wanted to eat these for breakfast. I had all of these ingredients in my house already, so this is something that I would make again.
