Apple Cider Mini Muffins
In the fall our house is always stocked with apple cider and apple butter. This recipe was a nice way to combine those ingredients.

Ingredients:
-2 cups flour
-1 1/2 tsp baking powder
-1 1/2 tsp baking soda
-1/2 tsp salt
-2 teaspoons cinnamon
-1 large egg
-2/3 cup brown sugar
-1/2 cup apple butter
-1 tsp vanilla extract
-1/3 cup honey
-1/3 cup apple cider
-1/3 cup sour cream
-2 Tbsp canola oil
Topping
-2 Tbsp unsalted butter
-1/4 cup sugar
-1 Tbsp cinnamon
Combine all dry ingredients in a large bowl and all wet ingredients into a separate bowl. Combine the wet ingredients with the dry, stirring until just incorporated (do not over mix!).
Spray a mini muffin tin with cooking spray and back for 10 minutes at 400 degrees.
Repeat until the batter is gone, this made about 48 mini muffins. Brush each muffin with a little melted butter and then roll in cinnamon sugar.
These were interesting. I thought they tasted good and like apples, my mom said the taste and texture reminded her more of gingerbread. Because this made so many, I gave some away to friends (it's always good to have a food blogger friend). They also enjoyed the muffins. I would make this again next fall.
