Fried Green Tomato BLT
I love fried green tomatoes and I managed to pick the last few green tomatoes out of our garden before the frost. This sandwich was a nice way to enjoy the some of the last fresh produce of summer.

Ingredients:
-2 large green tomatoes, sliced
-1 egg
-½ cup all-purpose flour
-¼ cup Panko breadcrumbs
-1 teaspoon salt
-¼ teaspoon pepper
-canola oil, for frying
-kaiser rolls
-vegan bacon
-iceberg lettuce
-Spicy mayo (mix together hot sauce and mayo)
Dip each tomato slice into the flour, then the milk/egg mixture, then into the panko/salt/pepper mixture. Fry in hot oil until golden brown. At the same time cook the vegan bacon. Build your sandwich. Lettuce, two fried green tomatoes, vegan bacon and a little spicy mayo.
The fried green tomatoes were really tangy, the bacon added a salty crunch and the spicy mayo added a little bit of heat. If you enjoy fried green tomatoes, then you'll enjoy this sandwich. Overall it was easy to put together, not too much work.
