Cheddar and Chive Breakfast Potatoes with White Gravy
When J, Becky and I went to homecoming a few weeks ago we had something similar at the alumni brunch offered by our alma mater. This is something easy to create for breakfast or brunch and it was a hit with my entire family. There were no leftovers!
Ingredients:
-Three medium sized potatoes, cut into bite sized pieces
-Olive Oil
-Cheddar Cheese

-Chives
Gravy
-1 1/2 cup milkGravy
-2 tablespoons flour
-1 tablespoon butter
-1/2 teaspoon pepper
-1/2 teaspoon salt
-1/4 teaspoon garlic salt
Heat a few tablespoons of olive oil in a large skillet and saute the potatoes until golden brown.While cooking the potatoes, mix the gravy. Heat all of the ingredients in a large pot, whisking until thickened. Remove the gravy from the heat and stir in the potatoes.
Pour into a baking dish, top with cheddar cheese, and bake at 350 for 5-7 minutes. Top with chives and serve immediately.
J declared this the best thing that I ever made, he went back for second and thirds. The gravy is well seasoned and adds a nice flavor to the potatoes. Cheddar and chive is a classic flavor and goes well with the seasoning of the gravy. I will be making this over and over again.
Great recipe! I added 4 of the Morning Star Sausage patties to the gravy and it was just amazing!
