Cauliflower Bites with Cheddar Mustard Dip


Cauliflower + cheese = love. Cauliflower is one of my favorites, it is delicious and this is a little guilt free snack.

Adapted from Cinnamon and Spice and Everything Nice.


Ingredients: 
-5 cups fresh cauliflower florets with an inch of stalk
-1/2 cup panko crumbs
-2 tablespoons Parmesan cheese, grated
-1/4 teaspoon thyme
-1/4 teaspoon basil
-1/4 teaspoon garlic salt
-Dash of cayenne
-salt and pepper
-3 eggs
-2 tablespoons whole grain mustard
-3 tablespoons water

Sauce:
-1/2 cup skim milk
-3 tablespoons whole grain mustard
-1 teaspoon whole wheat flour
-4 ounces sharp cheddar cheese, shredded

Set up your ingredients: In one bowl three eggs, water and two tablespoons of mustard. In the other, the bread crumbs and seasoning. Dip the cauliflower pieces into the egg wash, then into the breadcrumb mixture. Bake for 20-25 minutes at 425. Whisk together that milk, mustard and flour.
Bring to a simmer and then stir in the cheddar cheese.

This was really good, the cauliflower was crispy and the cheddar mustard sauce was good. I really enjoy mustard, it is the first condiment on my sandwiches and burgers. This had a nice tanginess to it and it paired well with the mild flavor of the cauliflower.
