Quinoa Burgers with Sweet Potato Fries, Beer Caramelized Onion and Swiss
This is one of my new favorite recipes. Throughout the time that I've been blogging here, I haven't had too much success with homemade burgers. This burger stayed together well throughout grilling, was well-seasoned and tasted great! All of the toppings didn't hurt either.

Ingredients:
Quinoa Burgers
-2 cups cooked red quinoa
-1 cup cannellini beans, mashed
-1/2 cup panko bread crumbs
-1 large egg, lightly beaten
-1 clove garlic, minced
-1 teaspoon cayenne pepper
-1/2 teaspoon salt
-1/2 teaspoon pepper
-3/4 cup sharp cheddar cheese, shredded
-3 tablespoons olive oil
-4 of your favorite burger buns
-Swiss cheese slices
-Swiss cheese slices
Sweet Potato Fries
-1/2 bag of frozen sweet potato fries
-1/4-1/2 cayenne pepper
-1/4 teaspoon smoked paprika
-salt and pepper, to taste
Beer caramelized onions
-1 tablespoon butter
-1 large sweet onion, thinly sliced
-1 cup beer (I used Bud Light)
1.) In a large bowl mix together the quinoa, mashed cannellini beans, bread crumbs, egg, garlic, cayenne pepper, salt and pepper. Mix well and then mix in the shredded cheddar cheese. Mix well again and form into equal burger patties (I made 5). Place on a plate and put in the fridge.
2.) Bake the sweet potato fries according to package directions. Toss in the seasoning once cooked.
3.) Heat large skillet. Add 1 tablespoon butter over medium-high heat. Add the sliced onion and cook about 15 minutes, stirring frequently. Now add the beer, let it cook into the onions, add more and let it cook. Do this until the 1 cup of beer is gone.
4.) Grill these over medium heat. We used a vegetable grill pan over the grates to prevent the burgers from slipping through the cracks. Add the swiss cheese late in the cooking process to melt it.
5.) Build the burger by layering the burger, onions, and sweet potato fries onto a bun.

You will really need to make sure that there is a nice bean to quinoa ratio in these burgers. The burgers that didn't have enough beans in them fell apart during the grilling process -- the ones that had enough beans were not crumbly at all. We both thought these turned out great, there were several layers of complex flavors. The onions tasted great (and I'm not a beer fan) and the spices on the sweet potato fries were lovely. This is the most successful homemade burger I have made.
