Bacon Wrapped Mushrooms Stuffed with Blue Cheese



This recipe is an attempt at a grilled appetizer. I used vegan bacon, if you wanted to use bacon you could, but this is a vegetarian blog so I went with the good stuff. You could easily adapt this to different flavors, add some veggies to the filling or take out the hot sauce if you like milder flavors.

Ingredients
-12 whole Large Stuffing Mushrooms
-4 ounces, weight Cream Cheese, Softened
-2 ounces, weight Blue Cheese, Crumbled
-Salt And Pepper
-6 dashes Hot Sauce
-6 slices Vegan Bacon

Clean your mushrooms and remove the stems. In a bowl mix the cream cheese, blue cheese, salt/pepper and hot sauce. Stuff each mushroom with the cheese mixture. Wrap half a slice of vegan bacon around each mushroom and skewer. Grill for 5 minutes per side.







I added more than 6 dashes of hot sauce in order to give this a little more of a kick. Overall, I thought these turned out good, they grilled for a while though which Dave didn't like. He said he spent more time grilling them than he did eating them. It would be a nice appetizer for a party if you were already grilling though.
