Meatless Monte Cristo

Happy Bastille Day! This is a French holiday which celebrates the storming of the Bastille. Think the equivalent of the Fourth of July here in America -- celebrations, parades and fireworks.

A traditional monte cristo sandwich is made with cheese and ham, dipped into an egg batter and then fried like a grilled cheese. The monte cristo is then served with jam and powdered sugar sprinkled over the top.

This meatless version removes the ham, but leaves all of the other traditional parts.

Recipe from Oh My Veggies.

-4 slices oat nut bread
-2 ounces cheddar cheese, thinly sliced
-3 ounces Swiss cheese, thinly sliced
-2 large eggs
-1/3 cup 2% milk
-2 teaspoons granulated sugar
-1/4 teaspoon salt
-1/8 teaspoon freshly ground nutmeg
-1 tablespoon unsalted butter
-Confectioner's sugar and strawberry jam for serving

Add the slices of swiss, now cheddar. Whisk together the egg, milk, sugar, salt and nutmeg into a bowl.
Soak both sides of each sandwich. Melt butter in a skillet and cook each sandwich like a grilled cheese. Cook until golden brown on each side. Serve with powdered sugar sprinkled on top and strawberry jam on the side.

I served this as brunch...I like sweet things for breakfast, but I'm not sure if I could have handled this so early in the morning. This was decadent -- the cheese was melted and gooey, the powdered sugar added a nice layer of sweetness and the strawberry jam added an element of tart. Overall, Dave and I both really enjoyed this recipe.
