Cheddar, Kale and Garlic Grilled Cheese



This was supposed to be a panini, but I didn't have a panini press so I decided to make a grilled cheese out of it. I had all of the ingredients for this in my pantry already and I also had kale leftover from another recipe. This is a great way to use leftover kale. Somehow I always end up with way too much and then have trouble using it before it goes bad.

Ingredients:
-1 tablespoon extra virgin olive oil
-1 shallot, thinly sliced
-1/8 teaspoon crushed red pepper flakes
-1 pound kale, rinsed, stems removed and roughly chopped
-1 tablespoon apple cider vinegar
-Coarse salt
-2 cloves garlic, minced
-4 tablespoons butter, room temperature
-4 slices oat nut bread
-4 ounces sharp cheddar cheese, sliced

Heat the oil in a skillet. Saute the kale with the seasoning, apple cider vinegar and garlic. To build the grilled cheese, melt a ridiculous amount of butter in a skillet. Add cheese to the bread, a good serving of kale. Top with the other slice of bread and cook until golden brown on each side.








I thought this grilled cheese turned out pretty good. It was one of the first that we've made since grilled cheese month in April -- I think Dave is a little afraid of grilled cheese now after eating all of my weird creations during April. Overall, we both enjoyed this grilled cheese, although Dave thought that it could have used less apple cider vinegar.
