Spicy Smashed Sweet Potatoes
I've been meaning to try this out for a while, because sweet potatoes are one of my favorite foods. This seemed like a good way to make a little bit of a different side out of them. This was also easy to make, the seasonings are all common things I had already.
This recipe comes from My Happily Ever After.
Ingredients:3 sweet potatoes (or I used a can)
4 Tbsp brown sugar
1 1/2 tsp ground cumin
2 1/2 tsps chili powder
1 tsp garlic powder
1 tsp onion powder
2 Tbsp olive oil
|Cut the potatoes into pieces. Mine were big enough for about|
2 bites. If you are using actual sweet potatoes,
peel and cook them first.
|Use the back of a spoon to smash them and make a crater.|
|Mix the seasonings in a bowl, and add a spoonful to the middle|
of the sweet potatoes. Drizzle with olive oil.
|Bake for 30 minutes at 350.|
This combination of seasoning was great! I'll probably try it again soon on something else. The outside of the potatoes got a little crispy, but not too much, they were mostly still soft.
