Baked Avocado



I love avocados! If you haven't tried the avocado aside from in guacamole this is a great recipe to expand your horizons -- aside from the avocado I had all of the ingredients in my kitchen already and this recipe only took a few minutes to put together. This recipes come from Mele Cotte.

Ingredients: 
-1 ripe Avocado
-¼ cup bread crumbs
-1 garlic clove, minced
-1 Tbsp. grated Parmesan cheese
-1 Tbsp. basil, chopped
-1 Tbsp. lemon juice
-Salt and freshly ground pepper to taste
-¼ Salsa
Mix together all ingredients except for the avocado.
The filling will make enough stuffing for both halves of the avocado.

Stuff back into the avocado. 
Bake at 450 for 5 minutes. 

Serve.

This recipe was delicious! I made this after a long day at school and I was so happy that there was only a minimal amount of work, barely any dirty dishes and a delicious meal waiting for me after only a few minutes. The hot avocado went perfectly with all of the flavors in the stuffing and the breadcrumbs added a nice crunch to the smooth/creamy avocado. If you're looking for a light dinner this is the perfect way to meet that need!
