Plum Ketchup


This was something really different, it didn't taste like ketchup, but the fruitiness was pretty good. For this one, we grilled vegetables and used this as a sauce. The good thing about this one was that it could be made ahead of time, refrigerated, and eaten anytime later.

This recipe is originally from The Tolerant Vegan.

Ingredients:
-5-6 red plums, diced
-2 cloves garlic, minced
-1/3 cup packed light brown sugar
-1/3 cup apple cider vinegar
-1/3 cup water
-1/2 teaspoon salt
-1/2 teaspoon ground ginger
-1/4 teaspoon ground allspice
-1/4 teaspoon freshly ground pepper
-1/8 teaspoon cayenne pepper
-dash cinnamon

To make the ketchup, mix all the ingredients and simmer for 45 minutes. Cool and serve.

We grilled some potatoes, green beans, onions,
green peppers and mushrooms.


The grilled vegetables were good in this basket.

We were a little on the fence about this one, I thought it was only ok with the zucchini and green beans, but was pretty good with potatoes. My mom liked it on everything though. It was worth trying though, it was something different and easy to make with grilled vegetables.
