Red Velvet Crêpes
Ingredients:
Crepes:
– 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3 tablespoons sugar
- 2 cups butter milk
- 1 1/4 cup whole or lowfat milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 tablespoons cocoa powder, sifted
- 1 tablespoon red food color gel
- 2 tablespoons unsalted butter, melted
+ 2 tablespoons cooking oil (for pan) properties.
Mascarpone Cream Filling
- 500 mL heavy cream
- 300 gr mascarpone cheese
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
Chocolate Ganache Topping
- 75 gr bittersweet chocolate
- 75 mL heavy cream
- 1 tablespoon sugar
You know I have a distaste for expensive ingredients and since I bought marscapone I wasn't going to buy buttermilk. A little less than a cup of regular milk + 1 tablespoon of white vinegar will make a cup of "buttermilk". Just let it sit for at least five minutes. The buttemilk is a necessary ingredient so make sure to use that as well as the baking powder and soda...both are needed.
Mix the marscapone and 1/4 of a cup of powdered sugar. In a separate bowl whip the cream and 1/4 of a cup of powdered sugar into stiff peaks. Fold into the marscapone. Set aside until needed. |
Mix dry ingredients. |
Add wet ingredients and food coloring. |
Batter should be thick and runny like soup, there shouldn't be lumps. |
Filling and batter. |
Ladle approximately 1/4 of a cup of batter into a greased skillet. |
Remove from heat and roll the batter over the bottom of the pan. |
Until covered. |
Cook the crepes until the batter is no longer shiny, the original recipe recommends flipping the crepes, but after three failed attempts I decided to use less batter for thinner crepes. Once the crepe looked cooked on one side I flipped it onto a plate and separated the finished crepes with paper towels.
Towards the end of the batter boil the remaining cream with a little sugar, add the chocolate to the boiling liquid to make a sauce.

Roll and add some chocolate sauce on top. |
Eat. |
The worst part of this recipe was all of the dishes. |

Overall this recipe took a lot of ingredients and was time consuming to make. It took three or four attempts to get a decent looking crepe and it was really hit or miss after that to get a good crepe that wouldn't fall apart when flipped. If you're confident with crepe making then this would be a good recipe, I personally won't be making it again due to the level of difficulty.
I thought the flavor of the crepes was good...my boyfriend on the other hand hated them. For all of the ingredients, the time and the level of difficulty I won't be adding this to my recipe collection. I so desperately wanted this recipe to work because this would be perfect for a Valentine's Day breakfast or brunch, but I just couldn't get it right. If anyone has suggestions, let me know!
