Garlic Roasted Potatoes
I found the original recipe for this on the FoodNetwork website. Usually the recipes I see there look really good, but have a lot of ingredients and seem complicated to make. This one was easy, and I already had all of the ingredients in my kitchen. The original recipe served 8, so I scaled it down.
Ingredients:
-2 medium red potatoes
-1 tsp minced garlic (equivalent to 2 cloves)
-Olive oil
-Salt
-Pepper
-Parsley
Preheat the oven to 400.
Use enough olive oil to coat the potatoes. Add the garlic, salt and pepper to taste. |
Cut the potatoes into bite sized pieces and coat them in the mixture. |
Spread out onto a cookie sheet. |
Cook for about an hour, until the potatoes get slightly brown. Flip them halfway through to make sure they are evenly cooked. Sprinkle on parsley. |
This turned out better than I had expected. Although it took a while, it was really easy to make. All of the prep work was finished in about the time it took for the oven to preheat. This would be a great side dish, or even a good lunch on its own.
