Grilled Onion & Red Pepper Sandwich with Fresh Mozzarella & Balsamic Vinegar
This was one of this dishes I had while in England during a barbecue in London. Originally it was zucchini and red pepper, but we didn't have any more zucchini in the garden so I decided to use an onion instead.
Ingredients:
-An onion
-A red pepper
-Fresh mozzarella
-Balsamic Vinegar
-Artisan Bread Rolls
| Slice the mozzarella and the veggies. |
| Grill until tender, mine took 20-25 minutes |
| Grillin' |
| Top the bun with the veggies. |
| Add the fresh mozzarella. |
| Add the balsamic vinegar. |
| Enjoy. |
All I can say is yum! This is an easy way to use up some of the last summer vegetables out of your garden and a nice way to enjoy the last sunny days before fall starts.
