French Toast Breakfast Muffins


This recipe has been waiting on my Pinterest since I joined in March and the picture had me salivating all over again when I saw it lurking on my huge "Recipes To Try" board earlier in the week. Here's an easy muffin recipe which is sure to leave you wishing that you had doubled or tripled the batch.

Ingredients:

Muffins
-1/3 c. butter, melted
-1/2 c. sugar
-1 egg (preferably room temperature)
-1 1/2 c. all purpose flour
-1 1/2 tsp. baking powder
-1/2 tsp. salt
-1/4 tsp. nutmeg
-1/2 c. milk

Topping 
-1/2 c. sugar
-1/2 c. butter, melted
-1 tsp. cinnamon


Sift the dry ingredients together in a bowl. 


Add the wet ingredients to the dry. 

Gently mix. DO NOT OVER MIX! 

The batter will be slightly lumpy. 

Pour into a greased muffin tin. 
Bake for 20-25 minutes at 350 degrees.

Dip the still warm muffins in the melted butter.

Roll in the powdered sugar. 

Enjoy.

Warm, cinnamon goodness.

These muffins were fantastic and so easy to make (no mixer required). When I woke up this morning I asked my boyfriend if he had eaten a muffin for breakfast and he replied that he had eaten three. By the time I finally made it to the kitchen before work there were six muffins left of the fourteen muffins I had made. This is a must try recipe sure to satisfy for breakfast or dessert.
