Grilled Onion & Red Pepper Sandwich with Fresh Mozzarella & Balsamic Vinegar
This was one of this dishes I had while in England during a barbecue in London. Originally it was zucchini and red pepper, but we didn't have any more zucchini in the garden so I decided to use an onion instead.
-A red pepper
-Artisan Bread Rolls
|Slice the mozzarella and the veggies.|
|Grill until tender, mine took 20-25 minutes|
|Top the bun with the veggies.|
|Add the fresh mozzarella.|
|Add the balsamic vinegar.|
All I can say is yum! This is an easy way to use up some of the last summer vegetables out of your garden and a nice way to enjoy the last sunny days before fall starts.
