Oven "Fried" Pickles


One of my exes used to cook in a bar on weekends and would always bring me back a heaping box full of fried pickles. I loves pickles and I love deep fried food -- frying pickles seals in the delicious juiciness of the pickles while delivering a hot, tangy food. I still order these every time I order from a restaurant in my college town. However, no one would be surprised to hear that fried pickles aren't good for you (nothing fried ever is!) so the blogger at the Pennywise Cook cooked up this recipe which delivers the same flavors without all of the deep fried badness -- I adapted the recipe to give it a little extra kick.

The original poster served these with a homemade ranch dressing. Ranch is good with fried pickles, but I will also want to smother mine with honey mustard so that's what I used for my dipping sauce.

Ingredients:
-20 oval dill hamburger pickles
-1/4 cup of bread crumbs
-1/8 cup of flour
-1/8 tsp of paprika
-1/2 tsp cayenne powder
-1/4 cup dried parsley
-1 egg

Place a lined baking sheet into the oven and preheat the oven to 450.



Drain the pickle slices on some paper towels. 

Dip in the egg wash.

Dip in the combination of breadcrumbs, flour, paprika, pepper and salt. 


Place the slices on the heated baking sheet.

Sprinkle with additional cayenne powder if desired.

Bake for 12 minutes, flipping the pickles half way through.

Serve with desired dipping sauce. 


These smelled divine while they were baking. In halving the recipe I somehow didn't use enough breadcrumbs (use extra), but the pickles turned out crispy and hot regardless of the breadcrumbs. This was also a really easy recipe to make and it would be great for a quick lunch or dinner on a cold day, it would also make a good party appetizer.
