Balsamic Roasted Green Beans and Mushrooms


J. and I have been trying to eat a little healthier recently which has mainly consisted of adding more salad and attempting to add more vegetables. Vegetables are no issue for me...J. on the other hand is so picky when it comes to food, especially vegetables. This recipe had a little something for both of us, you can find the original recipe here.

Ingredients:
-8 oz. mushrooms, sliced in 1/2 inch slices
-1 lb. fresh green beans, preferably thin French style beans
-1 1/2 T olive oil
-1 T balsamic vinegar
-salt and fresh ground black pepper to taste
-2 T finely grated parmesan cheese

I made this recipe a little smaller since I was making it for just two of us, the way I did that was by making 1/2 a pound of green beans and using the other recipes the same.

Slice the mushrooms and snap the ends off of the green beans.


Add the sliced mushrooms and green beans to a ziplock bag with the balsamic vinegar , oil, salt and pepper.
Move the vegetables around the bag until they're coated.

Lay out on a baking sheet, bake at 350 for 35 minutes.
Serve.
I thought this would win over my picky boyfriend...but it didn't. I on the other hand really enjoyed this, I think it had great flavor and would make a great side dish for almost any meal. This is a good side to pair with the lasagna roll-ups from earlier in the month.
