White Chili


Happy Soup Wednesday! I'm a big fan of chili, this recipe is an adaptation of this recipe combined with the comment from this Pinterest pin.

Ingredients: 
-1 tablespoon olive oil
-1/2 medium onion, diced
-5 cloves of garlic, minced
-1 6oz can of green chiles
-1 teaspoon chilli powder
-1 1/2 teaspoons dried oregano
-2 cans canellini beans 
-6 cups vegetable broth or water
-salt


Saute the onion in a large sauce pan  for three minutes.
Saute the green chilies in the same pan for three-five minutes.
Add all other ingredients, bring to a boil, then simmer for an hour.

Serve topped with cheese.
This chili was pretty good, but the best way I ate it was with sour cream and tortilla chips. Scoop some sour cream onto a tortilla chip, scoop some chili on that same chip and enjoy. I ate an entire bowl that way...although it was full of calories it was so worth it. Although there is an entire can of green chilies in the chili, it really wasn't spicy the dominating flavor was the garlic, however, the garlic flavor wasn't too overwhelming just a nice note in the white chili.
