Roasted Balsamic Asparagus with Feta
I love asparagus! This is a recipe that I adapted from this blog. This recipe is an easy to make side dish which would pair great with most main courses -- we paired ours with Tomato Soup Mac & Cheese.
Ingredients:
-1 large bunch fresh asparagus
-olive oil
-4 oz. feta cheese
-balsamic vinegar
Preheat the oven to 350.

Trim the ends off of your asparagus, coat in oil, balsamic vinegar, salt and pepper. |
Remove from the oven and top with feta. |
The asparagus was nice and tender and the balsamic vinegar and feta were the perfect compliment to the vegetable. If you're looking for a quick dinner side dish this is one to try.
