Oven Toasted Ravioli


Today is the kick-off of World Vegetarian Month so in order to celebrate World Vegetarian Day my carnivore boyfriend gave up meat for the day. For more information on vegetarianism check out the World Vegetarian Day site. On the website you can take the pledge to go vegetarian for one day, one week or for the entire month of October.

We made these oven toasted raviolis for dinner, I found the recipe on Pinterest.

Ingredients:
-Frozen ravioli, thawed, our bag made about 30 ravioli
-2 eggs
-2 Tbsp milk
-6 Tbsp Italian bread crumbs
-6 Tbsp Panko bread crumbs
-4 Tbsp grated parmesan cheese
-cooking spray


Mix the milk and eggs in one bowl.

Mix the cheese and breadcrumbs in another.
Bake for 13 minutes at 375. 
Serve with marinara and a side salad.
These ravioli were really good. We made two batches -- one cooked for 11 minutes and one cooked for 13 minutes. The ravioli that cooked longer were much better -- the insides were nice and toasty while the outside was crispy. These oven baked ravioli are a good alternative to fried ravioli and a deliciously simple week night dinner alternative.
